Ingredients:
- 2 crusty baguettes, cut into eight 3 to 4 inch pieces
- 1 1/2 lb. chicken breast, roasted and diced
- 1 1/2 tsp. Dijon mustard
- 1/4 cup Sultana raisins
- 1/2 cup mayonnaise
- 1/4 cup scallions, finely chopped
- 1/2 cup celery, finely chopped
- 1/4 tsp. curry powder (yellow madras)
- 2 oz. sliced almonds, toasted
- Freshly ground black pepper
- Tabasco sauce
- Salt to taste

Preparation:
- Preheat oven to 300 F
- Cut the bread pieces in half lengthwise (being careful not to cut through the bread completely). Place the bread on a baking sheet and place in the oven just to heat (approximately 3 to 4 minutes).
- Meanwhile, place remaining ingredients in a bowl and mix well. Season to taste with salt, pepper and Tabasco sauce.
- Remove bread from the oven and carefully spoon chicken mixture into bread. Serve immediately.
