Pinot Pomegranate Scharffenberger Truffles

Pair with La Crema Pinot Noir


Ingredients:
  • 1 1/2 cup Heavy Whipping Cream
  • 12 oz Scharffenberger 70% - Chopped
  • 1 Tbl Carlo Brand Pomegranate Molasses
  • 4 Tbl La Crema Pinot Noir
  • Pinch Kosher Salt
  • Unsweetened Cocoa Powder for Dusting


Preparation:
  1. Put chocolate, molasses and salt in a medium sized bowl.
  2. Bring cream to a rolling boil.
  3. Pour over chocolate and molasses and set aside for 3-5 minutes.
  4. Stir until smooth and velvety over cool water.
  5. When chocolate has cooled to tepid; stir in wine and set to chill in refrigerator.
  6. After mixture is completely cooled, scoop and roll to desired size, and roll in cocoa powder to cover.
