What better way is there to celebrate the last few weeks of summer than with a campfire and some s’mores? Last week I got some friends together and we did just that. There were four different s’mores on the menu: salted caramel, bacon, PB&J, and bananas foster.

Making s’mores is simple, fun, and a little bit magical. Start by roasting marshmallows over a campfire or a grill until they’re golden and gooey. Then, sandwich that warm, melty marshmallow between two graham crackers with a piece of your favorite chocolate. The heat from the marshmallow softens the chocolate, creating a deliciously melty, sweet treat that’s hard to beat. 

For these creative variations, just add the extra ingredients—like a drizzle of salted caramel, crispy bacon, a smear of peanut butter and jelly, or fresh banana slices with a splash of rum—right alongside the marshmallow before you sandwich it all together. Each bite offers a new twist on the classic, making every s’more a little adventure. 

Heating Options for S’mores

If a campfire isn’t available, no worries. Here are some great alternatives to get perfectly melted, toasty s’mores: 

  • Grill: Place s’mores on the grill over medium heat for a few minutes to get that smoky flavor and melted goodness. 
  • Oven Broiler: Arrange s’mores on a baking sheet and broil for 1-3 minutes. Watch carefully so they don’t burn! 
  • Microwave: Heat for 15-20 seconds to soften the marshmallow and chocolate quickly. It won’t get toasted but it’s fast and easy. 
  • Stovetop: Use a gas stove or portable burner and carefully toast marshmallows with a skewer over the flame. 
  • Toaster Oven: Similar to the broiler, place s’mores inside and toast for a few minutes until melty.

Salted Caramel S'more Recipe

Ingredients

  • Marshmallow 
  • Graham Crackers 
  • Chocolate 
  • One to two tablespoons caramel sauce 
  • Pinch of sea salt 

Instructions

  1. Prepare s’more as usual (layer chocolate and roasted marshmallow on a graham cracker). 
  2. Drizzle a spoonful or two of caramel on the s’more. 
  3. Top with a pinch of salt and another graham cracker.

Bacon S’more Recipe

  • Piece of thick-sliced bacon 

Instructions

  1. Prepare s’more as usual, including bacon. It’s as simple as it seems!

PB&J S'more Recipe

Cook time: 10 mins 


Ingredients

  • Marshmallow 
  • Graham crackers 
  • A couple teaspoons each of peanut butter and jelly (we used grape)

Instructions

  1. Spread peanut butter on each graham cracker. Add jelly to each side. 
  2. Place roasted marshmallow between crackers.
Bananas foster s'more

Bananas Foster S'mores

Prep time: 10 mins 

Cook time: 10 mins 


Ingredients

  • Marshmallow 
  • Graham Crackers 
  • Sliced bananas 
  • A couple teaspoons of dark rum 
  • One to two tablespoons caramel sauce 

Instructions

  1. In a small dish, quickly soak marshmallow in rum before roasting. 
  2. Layer sliced bananas on graham cracker, add marshmallow, and drizzle caramel. Add second graham cracker. 
La Crema pinot noir with s'more toppings

Wine Pairings for S’mores

S’mores and wine might not be the first pairing that comes to mind, but the right wine can make these campfire treats even more memorable. La Crema’s Sonoma Coast Pinot Noir and Chardonnay are perfect companions to each unique s’more flavor. 

The Sonoma Coast Pinot Noir, with its bright cherry and raspberry notes plus soft tannins, pairs beautifully with the smoky bacon and salted caramel s’mores. It complements the chocolate while balancing out the rich flavors without overpowering them.
