Peach & Corn Salad

Simple, fresh and easy. This easy-to-make salad boasts farm-fresh ingredients filled with the taste of summer.

We love this salad because of the mixture of flavor components and textures: Sweet velvety peaches and crunchy corn,  creamy mozzarella balls, sweet acidity from tomatoes, and a jalepeno kick at the end!

Peach & Corn Salad

  • 2 ears of corn, shucked and cooked (we roasted our on the bbq).
  • 1 cup fresh cherry tomatoes.
  • 4 ripe peaches.
  • 1 cup mozzarella balls.
  • 2 scallions sliced.
  • Handful of fresh cilantro.
  • Juice of 1 lemon.
  • Salt and pepper to taste.
  • 4 tablespoons of olive oil.


  1. Slice corn off the cob.
  2. Slice tomatoes in half.
  3. Pit peaches and cut into bite size pieces.
  4. Toss corn, tomatoes and peaches together.
  5. Add mozzarella balls.
  6. Mix together scallion, cilantro and lemon juice.
  7. Whisk in olive oil, salt and pepper.
  8. Add salad dressing to salad and toss.
  9. Garnish with cilantro and peach slices.
